In many typical bolivian eateries you will see a bowl of red (sometimes green) sauce on the table served along side the other condiments. This is the spicey sauce known as "Llajua" (or llajwa). If there is not a bowl on the table then you will probably be able to request some as they will probably most likely have some ready made in the kitchen. In Bolivia Llajua is as common as ketchup in the many western countries and is used to add to kick to soups and main courses by many people.
It is a simple sauce made from fresh tomatoes, locoto (a type of hot chilli) and flavored with a one of two herbs - wakataya or kilkiña - both herbs from Bolivia that add unique flavor. The ingredients are simply processed in a blender and some salt added before serving. The degree of hotness varies depending on the spiceyness of the actual chilli used and the amount but usually it is not extremely spicey for most chilli lovers . A visit to Bolivia should always include sampling this popular sauce although you should always test it for heat first before using too much!
